The Greggory Opens Friday, March 7 at The Arboretum of South Barrington

The Greggory, a long-awaited addition to the Chicagoland dining scene, will officially open its doors on Friday, March 7, 2025, at The Arboretum in South Barrington. As the debut project from Hearth Hospitality Group, The Greggory is led by industry veterans Gregg Horan (Gibsons Restaurant Group, Polo Bar New York), Bill Veremis (Rosewood Steakhouse Group, RL), and José Sosa (Gibsons Italia). The team brings decades of collective experience from some of the country’s most renowned restaurants. With a commitment to exceptional service and culinary excellence, The Greggory will present big-city sophistication in a setting thoughtfully designed for the heart of the suburbs.

A Modern Classic

The 10,000-square-foot space is anchored by an open hearth and rotisserie, and is complemented by multiple dining rooms, an expansive wine room, a show kitchen, and a dedicated bar space with a custom-designed counter. Intimate private dining areas accommodate groups of 10 to 50 guests, creating an ideal space for small gatherings, special occasions, or executive events. Rich navy blues, deep plaids, worn leather, and brass accents present a refined and welcoming atmosphere, created to feel comfortable for all occasions, whether a milestone moment or a casual, everyday celebration. 

Top-Notch Experience

The Greggory’s front and back of house are brought to life by a seasoned team with deep industry roots. Originally from a small town just outside of Mexico City, Executive Chef/Partner José Sosa has spent years perfecting his craft. His ingredient-driven, open-fire approach has shaped some of the city’s most acclaimed restaurants, including Gibsons Italia, Hugo’s Frog Bar & Fish House, and Ummo Chicago. General Manager Matthew Sheehan brings experience from Gibsons Italia and Asador Bastian, both recognized on national and global stages. Meanwhile, Beverage Director Rafael Royal, a Chicago suburb native, returns home after working at Gibsons Italia, The Dearborn, and Celeste, shaping a bar program that is innovative while remaining approachable. 

The Menu: Classic American with Mediterranean Influence

With open fire cooking taking center stage, Chef Sosa has crafted a menu that honors the legacy of classic American comfort dishes enhanced by vibrant Mediterranean flavors. From prime cuts of beef and the freshest seafood to handcrafted pasta, each dish is a blend of time-honored traditions, served with warmth and personality.

The wood-fired grill and rotisserie serves as the foundation for the restaurant and features dishes such as the Bone-In Prime Rib, Half Slagel Farm Rotisserie Chicken and Mediterranean Sea Bass, which are enhanced with deep char-grilled flavor. Diners can also enjoy a dry-aged steak program that includes a Wagyu Senku Tomahawk and Heidner’s Cut Prime Bone-In Filet, while fresh daily sourced seafood selections include market oysters, a seafood tower, and Charred Maine Half Lobster.

Drawing from Chef Sosa’s extensive experience in Italian cuisine, house-made pasta takes the spotlight with standout dishes like the Tortellini with Lamb Ragu, and Bucatini Cacio e Pepe. Meanwhile, elevated American tavern classics and bar bites—such as the Prime Rib Dip, the signature Gregg’r Steakburger, Wagyu Pigs in a Blanket, and Corned Beef Bites —bring a playful touch to everyday dining, delivering familiar favorites with exceptional quality and craftsmanship.

The Beverage Program

Under the direction of Beverage Director Rafael Royal, The Greggory’s beverage program will showcase classic cocktails reimagined with a strong emphasis on Martinis, bourbon & whiskey.  Royal will also showcase cheeky nods to iconic drinks from decades past with elevated twists, such as The Cosmo, the Lemon Drop and even a Chocolate Martini. There will also be a comprehensive list of Old World and New World wines, including reserve wines.
